I am SO sick of making dinner. No one told me that part of growing up, becoming a parent, meant I’d have to think about easy weeknight dinners for busy moms like me every day until I die – just so the little gremlins don’t actually die.

Why I Needed a Backup Dinner Plan

The LAST thing I want to do is work 8 hours, pick up the kids from daycare, commute the 45 minutes home, then stand in a messy kitchen with random things in the fridge and pantry, and somehow figure out dinner. Nothing sounds good. Nothing is easy. And we’re always out of the one thing I actually need.

So I came up with a solution: 5 no-brainer dinners I always keep ingredients on hand for. These meals are:

  • Picky eater approved (in my house, anyway)
  • Flexible
  • Cheap
  • Real food (not junk)

5 Easy Weeknight Dinners for Busy Moms

Dinner #1: Cabbage Lo Mein

Cheap, fast, oddly comforting. Shredded cabbage + noodles + soy sauce + whatever veggies you have. Bonus if you throw in rotisserie chicken or leftover meat

Dinner #2: Breakfast for Dinner

Always a hit. Scrambled eggs, toast, hashbrowns, maybe pancakes if I’m feeling wild. You probably already have everything you need.

Dinner #3: Pasta Night

Spaghetti, pesto, or Alfredo — pick one. Add frozen broccoli or spinach. Dump sauce on top. Done. (Pro tip: the microwave steamer bags of broccoli are gold.)

Dinner #4: Charcuterie Snack Dinner

That’s the fancy name for: cheese, crackers, fruit, veggies, deli meat, whatever random stuff is in the fridge. The kids love it. I love the no-cooking part.

Dinner #5: Cheese Roll Ups (Optional Taco Meat)

Tortillas + shredded cheese + roll and microwave. Sometimes I add ground beef or beans. Add guac or salsa if we’ve got it.

These are the easy weeknight dinners for busy moms I come back to again and again. Simply because I can make them with stuff I already have on hand, even on days I want to crawl into the couch and disappear.
